Italian food and wine is among the best in the world, and Vicenza is no exception when it comes to traditional Italian recipes. Spaghetti and pasta come in all shapes and sauces, but there are plenty of other traditional Italian dishes to sample in Vicenza. Italians take pride in their cuisine which begins with a "primo" usually of pasta and then moves on to the "secondi" which are either meat or fish. First courses like spaghetti, risotto or gnocchi are very popular as they are light and easy to prepare, and offer virtually unlimited recipes for the creative cook. Gnocchi with bruscandoli (a wild asparagus) is a specialty in Vicenza during the spring, as is baccala, or stockfish, a poor man's food which was originally brought to Vicenza from northern Europe and quickly found a home because of its ability to be dried and preserved for later consumption in winter. |
