Northern Italy and the Veneto region have a long history of cheese making and some very fine cheeses that rival those of France. The popular mountain resort town of Asiago to the north of Vicenza is well known for its many great cheeses and tourists can visit the cheese factories (caseificio) to both observe the cheese making process as well as sample some very fine Italian cheeses. While mozzarella (Naples) and parmigiano (Parma) may be the best known Italian cheeses outside of Italy, there are countless other cheeses to sample in the Veneto region. Gorgonzola (blue cheese) goes great with mascarpone (also used for tiramisu recipes). Asiago dolce is a mild cheese which is also great for risotto. Ricotta is often used in italian pastries. Or try one of our favorites - camoscio d'oro, an Italian camembert just as tasty as the French cheese. |
